Wine made from grapes that have been grown without the use of artificial or synthetic chemicals, such as herbicides and pesticides.
Fossil & Fawn has been making this Pinot Gris as a red wine. The fruit was sourced from two own-rooted, organically farmed vineyards with vines ranging in age from 22 to 32 years. Most of the fruit was destemmed, but about 40% of the lot was whole cluster fermented. The average length of maceration was 14 days on skins before being pressed into a mix of French and Oregon Oak. The wine aged for 9 months before being racked once and bottled without fining or filtration.
On the palate, the 2022 vintage demonstrates the best qualities of the year with concentrated fruit and savory flavors with refined tannins and balanced acidity.

As their house cuvée, Thea’s Selection is a blend of fruit sourced from all five of our organic, estate vineyards that span three different Willamette Valley AVAs. As such, it is a wonderful representation of the vintage across all of our sites. The nose is inviting and earthy with black cherry, black currant and plum fruit that is nuanced by subtle notes of black tea, chocolate, mushroom and lavender. This wine is rich and supple with silky tannins and a juicy sweet core which transitions into a long finish that leaves the taste of brambly fruit on the palate.

Their winery, located in the historic Watermill Building pictured on the front label, has been producing world-class wines from these vineyards since 2005.
This Merlot is full of plums and blackcurrants finishing with a hint of vanilla.

The three components for the 2021 Kubli Bench Amber - vermentino, riesling and roussanne - were grown and harvested with the intention to make this skin-fermented "orange" or amber wine. Riesling provides ample aromatics to the final blend, along with a surprising amount of structural tannins. Skin-fermented vermentino adds richness, depth and spice, while roussanne brings fruitiness, acidity, and additional layers of phenolic texture.
Because they are being grown for amber wines, we performed extra leaf removal on these vines in the vineyard to allow for more sun penetration into the fruiting zone, further developing the skin tannins of the grapes. These grapes were then harvested at slightly riper sugar levels with significantly enhanced phenolic development as compared to the same grapes harvested for a white wine.
