Rosé
A rosé is a genre of wine that incorporates some of the color from the grape skins, but not enough to qualify it as a red wine. Produced similarly to other reds. The time it ferments with grape skins is cut shorter, giving rosé its signature pink color.
This refreshing, dry Rosé was made from 100% Pinot Noir grapes, grown on LIVE certified sustainable vineyards in Oregon’s Willamette Valley. Aromas of fresh strawberry and white peach lead into a smooth, well-textured palate, with structure and bright acidity. Enjoy this wine any day of the week. Crack it open and cheers to you!

Deové (dee oh vay) is truly a labor of love. It is the story of friends with a passion for wine coming together for the enjoyments of the art. We bring value to our customers by producing low yield, high quality wine at an affordable price. We’ve been blessed with incredible fruit from the luscious hills of the Southern Willamette Valley, and inspired winemaking from a true master, Ray Walsh.
Deové represents the “Daughter of the Vine,” or wine itself. Our imagery evokes the sensual and feminine nature of wine, and our desire for peace in all of our lives.

Much like the classic quenching rosé wines from France’s Loire Valley, this dry and slightly savory Southern Oregon gem starts off bright, tart and citrusy with persistent pink grapefruit and then meanders into herbal and umami flavors with a little bit of texture on the finish. It’s a delightfully rounded rosé bursting with wonderful aromatics - at first like walking into a garden with fresh, sweet heliotrope, tea rose and sweet pea; then, gets whimsical with a whirl of cotton candy, marshmallow and marzipan notes; finally lingering with fresh fruit, scents of pink or star ruby grapefruit. This wine pairs with anything. Really. But, especially salty bites of serrano ham or prosciutto with ripe melon, olives, crudité, anchovies, sardines, shrimp cocktail, sushi, roasted veggies, charcuterie, smørrebrød, pickled things, quiche, pizza, tartines, Alpine-style goat cheese, gouda, and gruyere.

Quady North selected classic rosé varieties like Grenache, and planted them on their own roots in cooler sites, to encourage more vigor, later ripening, and naturally higher acidity. Picked early, at around 20B, this keeps alcohols low. Early picked Grenache adds the “citrus skin” notes to the flavor profile. The blend varies slightly from vintage to vintage, depending on the ripening patterns and yields of the various sites. Tasting notes include aromas of unidentified wildflowers and flavors of peach and stonefruit.
Fruit Sources: Our primary sources for Rosé are all vineyards that we own or manage. Steelhead Run, Mae’s Vineyard and Rivercrest are all in the cooler Applegate Valley and are our source for both Grenache and Syrah. Mae’s also supplies our Mourvèdre. In the Rogue Valley, the steep, high elevation Serenade vineyard is a great source for early picked Grenache.
98% Whole cluster or destemmed and pressed. 2% free run juice from destemmed fruit (saignee). Cold settled, acidulated (as needed) and fermented at 40-50F in stainless steel.

Harbinger Vineyard, planted to Pinot Noir by Scott & Annie Shull in 1996, rests high in the Chehalem Mountains and expresses a bright, lean style of fruit perfect for sparkling wine. The vines are trained in the single-Guyot method. The pruning style combined with a high vine density of over 2400 plants per acre, leads to high-acid fruit. At around 800’ elevation, the site sees cool nights and breezy days leading to slow ripening. The fruit is then combined with our nearby Tuscowallame Estate fruit from the highest site in the vineyard, our Block 1, lovingly called the “Bubbles Block,” that is farmed on a Scott Henry Divided Canopy system and leads to bright acidity and slow ripening. This block is the first harvested of the season while sugars are low and natural acids are high, creating a crisp, single vintage base wine.

This is Red Hills Cellars first Rogue Valley wine, and they could not be more thrilled with the results. Darker than many Rose’s, this wine is over the top with strawberry and subtle hints of pear, while not being overly sweet and holding a nice balance of acidity. It will remind you of biting into a freshly picked strawberry that has been warmed by the sun. This wine is very approachable and pairs well with lighter barbecue, grilled tri-tip with chimichurri, or just chilling on the patio. A very fun wine to drink.

The 2019 Rosé is congruent with our earlier releases. Because the winemaker allows the wine to go through malolactic fermentation the smooth mouthfeel and complexity comes through. Asian pear, lingering honey with a hint of vanilla end in a solid finish. This wine will pair well with Thai food, broccoli quiche or a light pistachio orange salad.

The grapes were crushed and de-stemmed and allowed to natively ferment on skins in two open top fermenters for two weeks. The fermented wine was racked off of skins, the must was pressed, and the entire blended lot was settled for 24 hours before being racked off of press solids to neutral French oak barrels for secondary fermentation.
Aromatics are delicate with notes of dried apricot, honey, and raspberry. Flavors of raspberry, sea salt, and Fino sherry make for a lovely drink.
