Some traditional fining agents can contain egg whites or casein (a protein found in milk) that can be used to remove tiny particles of sediment in a wine that cannot be removed by filtration during the fining process. The winemakers either leave the particles to sink naturally to the bottom of the wine, or use non-animal fining products usually bentonite, a form of clay or pea protein.
Harbinger Vineyard, planted to Pinot Noir by Scott & Annie Shull in 1996, rests high in the Chehalem Mountains and expresses a bright, lean style of fruit perfect for sparkling wine. The vines are trained in the single-Guyot method. The pruning style combined with a high vine density of over 2400 plants per acre, leads to high-acid fruit. At around 800’ elevation, the site sees cool nights and breezy days leading to slow ripening. The fruit is then combined with our nearby Tuscowallame Estate fruit from the highest site in the vineyard, our Block 1, lovingly called the “Bubbles Block,” that is farmed on a Scott Henry Divided Canopy system and leads to bright acidity and slow ripening. This block is the first harvested of the season while sugars are low and natural acids are high, creating a crisp, single vintage base wine.

Shiba Wichern Cellars strives to make balanced and subtle wines that represent Oregon’s unique viticulture, only producing small-lot handmade wines. 2018 production was about 900 cases (15 tons).
Shiba Wichern makes red, white and rosé wine from Pinot noir, Auxerrois and a tiny bit of Pinot gris. They perform their own vineyard management, because it is that important to the final wine quality believing in absolute minimal chemical intervention in the cellar. Wild yeast, low SO2, no fining, filtering or additions unless absolutely necessary!

Sun Break Winery produces balanced, elegant Pinot Noir is three distinct styles. Marie-Paule is fruit-focused and structured, featuring cherry and currant fruit flavors and aromas with savory and spice, and a rich, silky texture and finish. Marie-Paule is crafted from hand-picked Pommard, Wadenswil and Dijon 777, 114 and 667 Pinot Noir clones from the Cortell-Rose vineyard. The grapes are both destemmed and whole-cluster fermented, and vinified in small batches.

Brioche aromas of flint, honey, and asian pear create the first impression of this 2020 Pinot Gris. Rich mid palate flavors of mandarin orange and pear fade into a lengthy salted parmesan finish.

Aged in a two year old upright Austrian wood cask, their 50 year old vine Gewürztraminer starts off with aromatics of citrus zest and warm spices. On the pallet this dry Gewürztraminer is framed by a focused acidity that gives texture and length to the wine while it shows flavors of lychee, lemon drop, and citrus blossom.

Consistent, but different. Even though we used a new Acacia puncheon and the alcohol was a touch higher that in 2018, there is a continuity. Just like in 2018 this bottling is 100% Auxerrois and it is very much still the older more serious brother to the more light-hearted Willamette Blanc.
Perhaps because of its complexity, simple foods seem to go better with this wine. Razor clams a little garlic, black pepper and salted butter was a great match with this.

The three components for the 2021 Kubli Bench Amber - vermentino, riesling and roussanne - were grown and harvested with the intention to make this skin-fermented "orange" or amber wine. Riesling provides ample aromatics to the final blend, along with a surprising amount of structural tannins. Skin-fermented vermentino adds richness, depth and spice, while roussanne brings fruitiness, acidity, and additional layers of phenolic texture.
Because they are being grown for amber wines, we performed extra leaf removal on these vines in the vineyard to allow for more sun penetration into the fruiting zone, further developing the skin tannins of the grapes. These grapes were then harvested at slightly riper sugar levels with significantly enhanced phenolic development as compared to the same grapes harvested for a white wine.
