The grapes for the Coventina Pinot Noir are grown from a clone known for its richness and dark fruit. These grapes have produced a Coventina wine that is one of the more substantive Pinot Noirs the vintners have seen coming from the area. The properties of the vineyard allow the grapes to come to full ripeness at moderate alcohol levels. Fruit with that much ripeness stands up well to 100% French oak barrels. To add complexity to the final product, the grapes are processed in three different types of fermenters. The different forms of fermentation clearly lead to very different wines in the barrels. Proper blending results in a layered, complex Pinot Noir.

Vineyards such as Illahe (Mt. Pisgah, Polk County, Oregon AVA) and Mahonia (Willamette Valley, in the Jory hills just south of Salem) that Evesham Wood has been working with for decades make up the bulk of the blend along with Eola-Amity Hills AVA sites: Prophet, Koosah, Jubilee, and Sojeau. Those grapes are fermented in small lots (1.25 ton, open-topped fermenters) and punched down twice a day. This vintage of the WV blend shows a bright nose with cherry, red apple, fresh flowers, and a touch of loam along with a textural creamy/silkiness component that’s balanced by juicy acid. Showing well now, watch this wine evolve over the next 3 months to 8-10 years.

Years ago, Founder Jim Bernau began experimenting with Pinot Noir by gently dropping hand-picked whole clusters in a chilled stainless fermenter, pushing all the oxygen out with CO2 and sealing the vessel tight. What happened next was magical — the berries started to swell and turn pink. When they burst, they released the most aromatic, fermenting Pinot Noir.

The sense of place and specificity that we value most highly in our wines takes many years to evolve. With our oldest vines we allow each block to speak for itself in a separate bottling. The second-generation vines at Bethel Heights, on the other hand, are just beginning to find their voice. In these years in between, the Æolian allows us the freedom to dream of what lies beyond the horizon.

J53 offers more than a passing resemblance to the nouveau wines of the Beaujolais; Novo meaning new in latin, and J53 representing the code for the average total number of days the wine spends in our cellar before being released to drink, it is indeed a wine of immediacy. A rush to the senses from the stellar 2021 vintage farmed by the de Hayr family Gemini vineyard in neighboring Laurelwood AVA. The concept for J53 is simple, the result mind-blowingly delicious and fresh. This wine presents approximately 5% of total production for the vintage. The inaugural 2021 will be bottled from a single 300L concrete tank of Pinot noir that was inoculated with our pied de cuve, sealed and left to warm in the late summer sun to ferment for approximately 10 days. Free-run juice is then drained to settle in tank, and only then, deemed worthy to bottle as a single, new wine.
